This sounds like the timing is out, backfires, have you tried checking the plug wires, spark plugs, and did you reset the code after installing the MAF sensor?

What would cause spluttering when raving car

Most cars have a rev limiter between 2000 and 3000 rpms when transmission is in park. Sputtering in gear could be bad plugs, dirty throttle body, dirty Mass Air Flow, bad Coil on Plug.(COP) Clean throttle body, clean Mass Air Flow sensor, remove and inspect plugs, replace if over 50,000 miles. Inspect all COPs for cracks. Use code reader to isolate fault or faults.

I was putting you in a thinking position.
Yes,if you disconnect the MAF-it will not start. Or if the computer has no input or control over airflow,as a result of a defective sensor.

Now, without your vehicle and some testing, I don't know if it is bad.
You suggested it wouldn't matter and would start.
Only replace it ,if you get it tested, and there is a problem. There is nothing you can do, and good luck finding a repair shop, that will do anything but replace it, and hope for the best,at your expense.

Let go with your theory

You get a PO102 MAF code.( Mass Air Flow Sensor)
Lets say the sensor is somehow not working correctly, and as you say,it has spark and fuel

I would guess, you think, the engine would be happy, having no idea how much air it is getting. Kind off like the computer will somehow overlook it is controlling an air pump in the first place.

You need to look for a hole or loose fitting clamps where your air duct runs from your air filter to the throttle body where the gas enters the motor. Any leak in this ductwork will make your vehicle hard to start and run poorly because too much air is getting past the mass air flow sensor.

Eng starts to sputter when the engine gets around 2k rpm mass air flow disconnected

You shouldn't run with the mass airflow sensor disconnected. That's probably the problem. Is it bad or shy is the mass airflow sensor disconnected?

Backfire and spits and sputters

checked the O2 and mass air flow sensors (shot in the dark) O2 sensor is on your exhaust manifold and the mass air flow is on your intake might be sending bad signals to your electronic control module (ECM) another scenerio hope this aint your situation had same problem on 3.0 liter engine turned out after trying everything to be burnt valve so a compression check might not be bad idea hope this helps
