It keeps running warm after i replaced thermostat, raidator cap and heat hose 2001 impala ls 3.8L v6

Are ou sure that you put it in the same way it came out? It can fit both ways upside down. But more than likely you have air in the system and it needs to be blead out. There should be to bleeders with 5/16 heads on them. One is on the left side of the engine on the bypass hose abopve the water pump and the other is on the right hand side near the thermostat. Start and run the engine with these open untill nothing comes out but coolant from both. I guarantee you get a lot of air out of the system and youll be good to go. It's cavitating fro the air in the system, you have to get the air OUT.

I can't get the thermostat housing off the engine to replace the thermostat. i've removed the bolts, upper radiator clamp and hose from the elbow going to the housing and it is loose, but it wo'n tcome off...

The thermostat is not under the upper housing. The thermostat is behind the lower housing that the lower hose is connected to.

If you are changing the upper housing known as the water outlet housing because it is leaking you are on the right track. You will need to remove the intake plenum on top of the engine and the upper radiator support. You will then be able to access the bolt on the backside of the engine that bolts the pipe retainer in place and disconnect the hose from the pip. The upper radiator support needs to be removed in order fro there to be enough clearance to pull the whole assembly out.

Temperature gauge red lined then dropped back down

more than likely but if the temp gets to high you run an extremely high risk of blowing a head gasket or warping or cracking the head.So have it changed out before driving the car much more and also have the water pump checked.
