Possible fault in the throttle valve section. there is possibility that the accelerator signal is not actuating the fuel pressure to rev up the engine.
Since the models were not specified and the details of the car was not specified, is it possible that the fuel pump is calibrated? is the ECM in good order? Is the electrics checked?
Please check on these sections.

Cold choke baffle has 3/16 opening minute I pump accelerator choke thermostat closes primary baffle shut no air to start I force choke open to start why insufficient air to run at high idle?

Your engine probably has an automatic choke device that adjusts automatically with engine temperature. To set the choke when the engine is cold you have to depress the accelerator to the floor and release it completely. You shouldn't have to depress the accelerator again to start the engine, turn the key the engine should start. As the engine begins to warm up it will also begin to initially run faster then it will start to run rough. At this point you have to press the accelerator and release it again. The auto choke mechanism should allow the choke butterfly to open. There may be a number of stops in the system and the choke butterfly will stop again still not fully open and only become fully open when the engine is at operating temperature. Hope this answers you question, Rgs. Bob

Engine revs but no acceleration

Clutch plate and pressure plate seem to be too weak to pull the car. Or one of the CV joints is detached from the gear box. To test the clutch plate, park the car on flat surface. Pull the hand brake up, start the car, depress the foot brake pedal, depress the clutch pedal, put the car in 1st gear, press the gas pedal and leave the clutch pedal at once, while keeping the brake pedal depressed.
Follow one of the two following statements:
1. Engine does not shut down and remain start. (Clutch plate, pressure plate and clutch bearing defective - Replace all as a set)
2. Engine shuts down. (Clutch system is OK and does not require any repair).

01 mazda will start but then shuts off

I have seen this problem and it was the air intake hose of the engine was cracked and allowing excessive unmetered air to enter the engine when you accelerate (causes the engine to run very lean and stall out) due to engine lift, the crack is hard to see and will be on the bottom of the hose.

Will not run if it starts as soon as you let of the gas it dyes may start and may not

To understand the problem with your car, you must first understand that when you are pressing down on the accelerator pedal with your foot, you are NOT "stepping on the GAS". You are actually stepping on the AIR. If you are having to open the accelerator in order to get the engine started, it is because the engine is not getting enough air to start on it's own. When you let up on the accelerator, you are shutting off the air.
It is the job of the Idle Air Control (IAC) solenoid (or motor) to allow enough air into the engine so the engine can idle when the accelerator is closed.

You MOST LIKELY have a bad IAC.

Bucking, slow acceleration, & shuts off

it can be couple of thing Try a fuel injector cleaner or new fuel injectors.it can be vacuum leak. Engines need a vacuum to run especially at idle which is when your car dies. It could be a stuck EGR.
If the check engine light comes on it will store a code so take it to a shop and pay them to read the codes. This may give you a starting point.
