Do you mean belt or pump?
If belt, then it could be rust on the pulley or pulley misaligned.
If you mean pump, then it must have leaked and run low enough to make metal flakes that needed to be flushed out before installing another pump. To flush, you just open a line at the bottom, and with the wheels off the ground, move the steering wheel side to side until the fluid is gone. Then refill.

Our 2002 ford escape with 52000 miles on it all of a sudden started to lose power and barely runs now

there there is no check engine light there is no misfire. Next i would recommend putting a fuel gauge on the car and check the pressure at idle i believe that car should at 65psi at idle.

Do I need to replace transmission fluid?

Forget the dash reminder gadgets or manufacture
maintenance schedules
You change trans fluid every 3 years
If you want to change at 30,000 miles that's
perfect,just don't go past 3 years & do power
steering at same time

Power steering seems to give out on cold, wet days. Dry, warm day and it worked ok.

Try changing the power steering fluid

That gets done every 3 years or 30,000 miles,
at the same time as the trans fluid

Most likely the steering rack is worn

I have had a pinging under my hood since I bought my ES 350 brand new two years ago I complained and complained after 52000 miles they just called and they are picking up my car and replacing the cam shaft...

There have been very limited issues with this engine, often times they are sporadic and hard to pinpoint, but Lexus takes the correct approach, rather than leave you hanging. Once an intermittent problem comes to light they will work very hard to make you happy, as long as they can pinpoint it. Tolerance for assembly in a Lexus is 3 times as stringent as a Toyota, you are driving the number 1 brand in reliability 14 years running
The 3.5 liter engine is shared by the GS, best selling RX and the IS350 and several Toyota vehicles as well.. It is VERY reliable but the odd one has an issue.
Relax , enjoy your free loaner and the ES when it returns...for many more miles.....You said it all , they are picking up the car for you, that is service!!!!!

05 saturn ion power steering cuts out

you need to replace either your high pressure line or your return line before you go and replace the entire power steering pump which could have a leak in it too. somehow you are losing fluid presure somewhere due to a leak .

Noisy Power Steering Pump

I doubt it is the fluid. I would guess more likely that the pump is going bad. If it is making a whining sould all the time or when steering at a stop, the pump is beginning to fail.
