Believe it or not this car had problems with carbon deposits, Alot of times this car will have a dirty catalytic converter. I'm not 100% sure if it still is but this was at one time under recall. Also it wouldnt hurt to change out the fuel filter and air cleaner... Maybe even the spark plugs but believe me as a mechanic the rear 3 plugs are a ***** if you dont know what you are doing with that engine. Other then that i have seen 3800 motors with over 400k on them running strong. Make sure that lower intake gasket gets serviced if it is damp. GM makes a new one that is now aluminum instead of plastic.

Acted like it was not getting enough gas; asked Star and they gave me the codes P0420, P0101, and P0068.

Google the codes and you should find explanations for each. AutoZone has free repair manuals online as well.

2001 Durango acts like the gas tank is full during filling cutting off the pump. The only way to fill tank is to pump gas really slow

Chrysler and Dodge have a fuel vapor filter that allows air out of the gas tank but filters the harmful fumes. Usually the problem happens from topping off your gas after the gas pump stops due to the automatic shut off and then putting more gas in the tank (to make the bill an even $50. or to the next $5 increment, or pumping more in just because it fits). Anyway the filter gets saturated with gas, is not able to breath, and causes a vacuum in the tank. Because of this, the anti-siphon ball is not able to float around and sits at the opening of the fuel fill tube and won't allow any more gas to be put in (acts like the car is full). If you pump super duper slow like put a nickel to hold the gas pump handle, it will trickle in without a problem, but it takes forever! Solution, get the filter replaced and don't over fill the tank.

Hesitating to go in drive. it goes, but slow. It is acting as it is not getting gas when I am giving it gas

If the engine just revs up and vehicle does not move much check transmission fluid. If low add some asap. If it is full and dark in color the transmission is or has failed.

It's like i will be driving and then acts like it's not getting gas so it slows down

You may have a problem with a blocked fuel fuel filter. When there is crud from the gas tank being picked up (sometimes after filling up with gas that has ethanol in it, which loosens any crud), it blocks the fule filter. Then, when the engine starves momentarily, the crud drops away and the gas gets thru again. Then it repeats the cycle. Put a new filter in it & the problem may go away.
