Bucking and missing engine

This can be a defective crankshaft postion sensor, have you run the system for electronic system fault codes? if not do that. To check for codes using the check engine light blink out follow these instructions at this LINK

1993 dodge dakota 5.2 v-8, under light throttle it as a surge. Engine rpm's will go up and down a little.

start by cleaning the throttle bore and plate with spray carb cleaner. use a toothbrush and rags to clean it out well. Then clean the IAC valve and its bore. lastly replace the PCV valve. use the rest of the carb cleaner to find any vacuum leaks at hoses and fittings. If problem is still there test or replace TPS.

Check your computer for trouble codes.

2001 Dodge Dakota 4WD Quad Cab: engine RPM's too high/jumpy

could be a lot of things. I personally would start with your vacuum lines... check for a leak somewhere. You can do that by spraying carb cleaner (if motor tries to die, you found your leak), or it could be a sensor, likely idle air control, mas air, etc.)
