Check the base of the headrest at the plastic ring. There should be a small button that is pushed in from the side of the ring.

Stick a heavy duty straightened out paper clip or ice pick in the hole in the posts holder and push the adjuster on the other side of the post. Pull the headrest up and out.

Get some sort of heavy duty hook or paper clip and place it between the post and the plastic ring around it. There is a ring around the post holding it in, try and hook it and pull away form the post as you pull up on one side of the headrest, repeat for the other side.
Since the bottom of the posts are tapered, replacing them should be as simple as sliding them back in.
