Depends on what thermostat you put in. Stock is a 190*. Which will usally run about 200-210. That's where most all small blocks are happy.

Yes you will be required to remove the dash to replace it.

SOURCE: Replacing the evaporator

Doubtful if this needs replacing - is usually only cracked vacuum lines around this unit or under the hood, or the gas-cap is not sealing on the tank fill tube.
This unit is usually under the vehicle near the rear axle, gas tank or in the middle of the vehicle.  Check all the vaccuum lines for cracks and replace.
Cannisters don't usually go bad unless you over-fill your tank to top and gas gets into it.  Don't fill car to limit - ever!
Check all wiring around the cannister and vacuum lines on the engine prior to replacing anything.

Do you have rear A/C? If so, your rear evaporator core drain might be stopped up. It is a rubber boot that goes through the floor to drain condensation that accumulates on the evaporator core. Bugs and dirt tend to cause a problem with the drains.

Trouble shoot 1988 Chevy s10 Tahoe v6 2.8 l

going by age of motor it sound like a "core plug" which has rusted, they love to put one in the block that covered by the fly wheel, if it is, when it goes it goes,!! this would mean removing the trans and plate to see, easy to fix when found, best to replace as many as you can and when done always use a coolant that stops rust, there is no quick fix that works on core plugs
