Alright, we need to do some checks first. Look at your air tube from the air filter to the throttle body and make sure there are no tears in the vallies. Double check all vacuum hoses. You may have an issue with either an auxiliary air valve, vacuum leak, or bad mass air flow valve. Let me know what you find if anything and we can go forward.

WELL, I LOOKED AT MY VACUUM LINES AND PULLED MY THROTTLE BODY OFF , CHECKED MY AIR TUBE, I WAS LOOKING FOR AN IDLE CONTOL VALVE BUT CAN'T SEEM TO FIND ONE, I'M IN THE PROCESS OF CHANGING SOME HOSES CAUSE I FIGURE I MIGHT AS WELL WHILE I HAVE ALL THIS STUFF APART. BUT STILL HAVEN'T FOUND ANY CRACKED OR BROKEN LINES.

run the car with the radiator cap off or the expansion tank cap off, which is part of coolant system and is pressurized, not to be confused with an overflow bottle which is not pressurized, and the heater on high. drain some coolant to allow for expansion. look/listen for bubbles. air from the vents should get hot. give it about 20 minutes

When I start the car it stays at 2000rpm for a few moments then drops down. I'll drive for a few minutes then put it in park and it revs up and down.

idle air control valve is bad replace it. at start up choke control runs till warm up while driving throttle opening controls engine at idle ,the idle air control valve.

2004 Jeep Grand Cherokee temp gauge high when heat is on

If your "check engine" light is turn on, I suggest scanned the PCM to know exactly what fault code is stored there. Additionally, could be some problem with the "temp sending unit".
