It depends on the mileage on this engine.
5W30 fine for break-in and 10W30 is good for a newer engine. If you find you consume oil, then 10W40 may work better.
Oil cooler in VW excellent! What happens is unknowing persons remove the air flaps or the flap controller or the thermostat making the system by-pass the critical areas for the air flow (and making it really hard to get up to proper temp in the winter).
Sure, you can completely re-do your oil system but it is not necessary.
I would avoid synthetic in air-cooled engines, personally, but the reasons are too involved to go into here.

Any 5W30 will work fine, however because the oil coolers in 1970 and pre 70 VW were so marginal it is a good idea to put a full flow oil filter on and if you really want to do it a service you should consider a remote cooler or a post 70 VW dog house cooler that was larger and added to your oil capacity by about 1.5 qts and you can extend your oil change to 3000 mi. I am an avid Amsoil fan for proven reasons... I have a hard working F-350 power stroke diesel with 240,000 miles on it and still as strong as new thanks to Amsoil 100% synthetic. One thing about synthetics that will help your 70 is that they tend to make your engine run cooler, but be warned if you have an oil consumption condition now it will be aggravated by synthetics so in that case stick with a good quality name brand Dino oil like Shell or Esso etc.

My vw kombi 1.8 carburetor flashes an oil light with be buzz at 2000rpm,what can be the problem?

You must assume the engine has low oil pressure, so have a mechanical test gage hooked up, if pressure is in specs then replace the oil pressure sending unit.
