Will the oil sensor switch shut the engine down

Well, yes and no.
If the red oil pressure light comes on, yes the engine could stop running. You could actually lose oil pressure, or the switch could fail.
A "change oil" notice would not cause the engine to stop.

Oil change light 04 buick century

Hello: Try this to reset oil life indicator, ignition key on, engine off: Push accelerator all the way to the floor 3 times in 5 seconds. If you have a DIC panel scroll through it and see if you have a oil life option on it. One of the two should reset your oil life. If you have the owners manual it should also tell you.

I just changed the oil in my 1994 buick century and the service engine soon light come on after, how do i reset this?

SES lights aren't maintenance lights, it means you have a trouble code set in the computer. Only way to "reset" it is to have it checked and repaired.
