I assume they checked the cooling fans to make sure they were kicking on. I had a similar problem and the lower part of the radiator was clogged with dirt, bugs, etc. Had to remove the radiator and flush it out.
I also assume they checked the coolant level??
Did they use a remote thermometer to make sure the gauges weren't defective?
You might try a different shop. They should not have given up that easy...
