It may just be condensation off the truck's cold side of the A/C unit.

I just wanted to update, I'm still getting water on the floor from ac with my 2010 chevy silverado im sure it is condensation, when water drips on the floor it is quite a bit especially when i turn a corner it really comes out and cold, if I don't use recirculate I don't get water on floor, I do live in south Florida I'm sure the humidity doesn't help. The truck now has around 20,000 miles January 2012

Since my wife only drives 6,000 miles per year, I've only changed the oil yearly. Now it has serious sludge build-up. Have I caused the problem?

Partially. I assume she mostly makes very short trips. This is part of the problem. I suggest you don't clean it. This will lead to other internal problems. Just keep doing what your doing until it dies one day. As long as it runs decent and you have oil pressure. And it doesn't knock(rod bearings) or tap(lifters). Just drive it. Again, just assuming, You are fixing an oil leak. You can clean the part you took off, just don't clean the engine. Your asking for problems if you do.

I have a 1999 chevy silverado 1500 2 wheel drive 5.3. It was running rough i took it to advance auto parts they put it on the machine it said idel control senser, throttle control senser, mass air flow...

Sounds like a vacuum leak. Spray carb/throttle body cleaner at all fuel and air intake areas ie; intake manifold to heads, throttle body to intake, all vacuum hoses, etc. Work the throttle to keep it running or have someone inside doing it. You will know if the carb cleaner gets sucked in somewhere. That will be the location of your vacuum leak.

The temp was always at 180 the last week its gone

Chevy is known to have manifold intake gasket weakness- it may have to be replaced (~$500). That would probably cause slow overheating. You may be leaking coolant through that leak.
Also, the water pump (much cheaper) can break, causing rapid overheating.
If you went to an honest mechanic they should be able to diagnose it using a thermometer.
If there is no smoke from the engine, don't let them convince you it is the engine...they tried that on me.

Low on engine oil

Well, if there are no leaks, then it has to be piston rings or valve seals. If it's only burning a quart every 1500 miles, you would barely see any smoke, and by the standards of 20 or 30 years ago, that was normal.
