It sounds like you may have a bad water pump but it is possible that the coolant is from the engine overheating due to the belt being off. Usually the reason the belt jumps off is because the auto tensioner is worn out and needs to be replaced. A worn water pump can also cause the belt to jump off it really depends on what happens first. Usually a bad water pump will be noisy...kind of "gravel in a bucket" sounding, but not always. Tensioners go all the time, your local auto parts store should have both, but neither one is what I would call easy to replace.

Check where your coolant leak is coming out of, could be water pump, coolant leaking on pulley and will cause belt to slip off of pulley.

The checj engine light on my 99 pontiac sunfire came on last week and stayed on when i drove only a few short distances. it sat for 4 days and was on again when i drove under 8 miles then finally turned...

first of all, was the water on the passenger side from the air conditioner or a leak (what color was the fluid?)-the cap has to be tight, otherwise it will not hold pressure, so that has to be checked before you set off again-push down as you turn the cap clockwise, and it will not hurt to have water in the system (it actually transfers heat better than antifreeze) but it has a much lower boiling point, so the cap has to be tight. Pay attention to the temperature gauge and do NOT overheat it-it is an aluminum engine and they do not tolerate excessive heat. Take your time, no AC (although the AC being on can keep a good cooling system more stable since the radiator fan is forced on when the AC is running, so you can, within reason, experiment)-no matter what, just don't let it run hot-not worth it.

99 Sunfire Coolant keeps dumping

You need to find the source of the leak. it hasn't overheated yet because you keep catching it and re-filling. From your description, it sounds a lot like a bad water pump seal (part of pump) but without physically looking you can't be sure of that. when the pump seal begins to fail, internal pressure while running often will drive the seal tighter against the shaft stopping the leak. as pressure drops as the engine cools, the seal relaxes and permits seepage.
With time, that will change and it will leak all the time.

2000 Ford Windstar fan belt came off

the tensioner for the serpentine belt may be worn or seized. have the belt put back on and when this is done you will be able to tell how much tension is on it.
