220 to 230 deg. F is actually normal for the 1998 Cadillac Deville. If it goes to 250 deg. F or even 260 deg. F it goes into a limp mode where fresh air is pumped into 1/2 of the cylinders to preserve the engine up to 40 mi. of travel (in the case that a radiator fan isn't working or coolant has completely leaked out of the system).
If a half gallon of water is gone in the system and you keep losing it, there is a leak in the system say in the water pump o-ring or the radiator, or a hose.
