Question about 1996 Jeep Cherokee Country
My 96 jeep shuts off in traffic and at stop lights but it always start right up and as long as I have my foot on the gas it runs fine

You need to check the manifold you might have a leak in it and it is sucking too much air to the exhaust. same thing was happening to ours

This sounds like a bad idle air control valve, but also make sure the throtlebody is clean, use a toothbrush and some throtlebody cleaner, spray and clean with brush, make sure to open plate by having someone hold gas pedal to floor, after cleaning if truck still stalls then replace the idle air control valve,
