I have a 2004 freestar . The engine light came on yesterday and now the revs are jumping up and down under idle and it's wanting to stall unless you keep the revs up.

Go to autozone and get a free computer scan. Report back with codes. Go from there. Is light steady or flashing?

My 2004 mondeo 1.8 16 v is playin up firstly when you start it up revs are on 1500 revs but then calms down to just under 1000 revs and when youd accelarate car just wants to slow down and also steering...

starting on very cold mornings ,the engine will run at high rpms (just like you have a choke on) and then will after a minute or two return to idle rpms( most cars is around 850-900)
If you have a hydraulic clutch and you have never changed the fluid then I suggest that you have it done as the fluid is probably freezing the water content in it ( brake fluid is hygroscopic-- attracts moisture from the air)
Check the linkage adjustments for dirt and other foreign objects stopping full movement or if the lever is direct into the top of the box then check the gear lever pivot at the top of the box for loose or adjustment.
If you have a cable clutch ,consider replacing the cable.

Sounds like a fuel starvation problem. Start with the fuel filter, then have the carb rebuilt. Make sure the idle setting has not changed.

I have a 2004 freestar that will not go in reverse unless i rev the engine and put it in reverse real fast. Also I put it in drive and go. when I stop it cuts off.

Sounds like transmission sleeping sickness, Ford had that problem with some of it's explorers not wanting to go into reverse when cold, Try to find a shop that uses a machine to flush the transmission instead of a filter change, we use BG products and equipment at our shop with great results.

you might want to have the Throttle position sensor checked. as they have been known to create this problem.

Car petrol engine revolution surges.

Here is the most common cause of surges and stalls, it is the idle speed control air-bypass valve and throttle valve, they get full of gunk over the miles and cause idle issues (stalls) like yours, Get a can of intake cleaner from any local parts store, not carb spray, intake cleaner, it is made by a company called CRC, remove the air intake hose to the engine, hold the idle high so the engine won't stall, then spray the can of cleaner into the intake while keeping the engine running, use at least 1/2 the can, shut down the engine and disconnect the battery for 5 minutes, then restart and complete a number of mixed driving cycles, town, freeway, stop and go etc., after a few days the problem will go away as the system will relearn to the clean intake.
