I cannot get the four bolts off that are around the pulley covering the water pump( do I jam a breaker bar in between the pulleys?), this is what I mean about detailed instructions each step do this to remove. Take this off and then this I am not a mechanic here so a little patience will be appreciated

I know Pontiac has a tool that fits right inside this area. There are no exact details for a job like this, but if you need to use a breaker bar to allow you to remove or at least loosen these bolts, then yes,you can use a breaker bar. I have actually modified many wrenches to access area on many vehicles, just to get a job done. Don't rush it, approach this job with patience.

How do I change the water pump on a 2001 Grand AM GT

Remove the serpentine belt from the water pump pulley. Remove the lower radiators hose's upper clamp at the overflow tank. Drain as much of the coolant as you can. Saving the liquid in a drain pan can be a good idea. Use a ratchet with a 10mm socket to remove the heater line off the top of the water pump. Remove the bolts holding the water pump body. Remove the old pump and clean surfaces completely. Install new pump with new gasket and silicon sealant. Reverse procedure to complete, Refill radiator via fill tank, check for leaks. Continue checking overfill tank for a few days.

GP with 3800 V6 keeps shedding the serpentine belt.

You have got something out of whack there, take a straight edge, like a metal ruler or framing square and line up the pulleys, try to find one that is out of whack. Wiggle the crank pulley and see if it is loose. If the belt is off, wiggle all the pulleys to see if one is loose. One of the pumps, comp, alt, etc, is either bent or has a broken bracket. Is the tensioner tight? Too tight? It should be ok if nothing squeals. Hope this helps.

The belt installation diagram is under the hood, look on the shock tower or over the radiator next to the Federal emissions certification sticker.
