No. Check to see if there are any loose wires - vacuum, plug, coil, etc. Check the distributor cap to see if it is in good condition. Listen for sounds of a vacuum leak.It could be a number of things that will only cause major problems for you out on the road.

describe in detail as to what happened. were you driving? were you idling? rpm jumped meaning it topped out? did this happen at first initial cranking of engine and then it died? your above stated question tells me little or nothing. btw gage is spelled gauge. nobody can help you if we don't know what in the world your are talking about or describing.

Go to Autozone, or any chain auto parts store. Have them read your engine trouble codes. It's called an OBD reader.
The trouble code is a 4 digit number that should tell you what component on your engine is faulty.

Oil gauge

cold oil is thicker, higher rpm=more pressure .factory guage is actually working like it should. if worried hook external guage on oil galley plug and check oil press.manually.

Temp gauge and blazer jumps around when driving

Vehicle temperature gauges (temp gauge) read the temperature of the liquid in cooling system. From what I understand, the temp gauge jumping around has since gone away after you placed water into the radiator. It is very possible that water converted into steam was trapped in the cooling system and reached the temp sensor in your engine. The vehicle moving caused this steam to shift around reflecting rapid changes in temperature on the sensor, causing the needle to jump around on your console.

Upon starting cold engine jumps to 3000 rpm .possible causes

You have a vacuum leak, possibly from a small hose or the rubber intake hose to the throttle body that is large, and ribbed. You may have a tare inbetween one of the ribs or other area.
