It can be expensive about 900. Are you sure it needs head gaskets? 3.1 engines usually don't blow head gaskets. It is however very common for 3.1 engines to have leaking intake manifolds. This repair would cost about 450.

Upwards of a $1000.00, it's a rather involved job.

Removing the heads and replacing the gasket is not that difficult assuming you don't have a problem with the deck surface or other problems with the top end. These issues will require a machine shop and precision machining. Usually there's a reason for the leaking head gasket. Go get the mechanics manual for you car, it will list all torque values and sequences.

Amount of time expected to do a head gasket, water pump on a 97 olds achieva 2.2?

I'd expect to pay anywhere from 8-12 hours of labor. A head gasket is a tremendously time-consuming job and takes a lot of work. You'll also be paying for other parts (intake and exhaust manifold gaskets have to be replaced, new coolant, new oil since both are drained before the job starts), and if you're doing a water pump, bite the bullet and do the timing belt, timing belt tensioner, accessory belt(s), and thermostat as well - those are normally done with the water pump and there's no sense in paying the labor twice.

Replacing head gaskets

You have to take a lot of parts off to get to the cylinder heads. Intake manifold..vacuum hoses..sometimes the timing belt. You better get a Haynes or Chilton repair manual. It takes 8 to 12 hours of work. Beats paying $1000 though.

That white cloud is caused by a blown head gasket, the knocking noise could be, a rod bearing, thrust bearing, somewhere in the valve train. Replace the head gasket and see if it still knocks, and change the oil and filter too. If it still knocks, than you have bigger problems.
