I have a Mitsubishi Galant 2010. What does it mean when then yellow exclamation point in paranthesis goes on the dashboard ?

Your owner's manual should explain all the instrument lights. From what you say it looks like a MIL (Maintenance Indicator Light). This is the car's computer's way of telling you to get to a maintenance shop and have them check the ECM (Engine Control Module). They will put a DRU (Diagnostic Reading Unit) on the car and tell you what is wrong. They will give you a DCL (Diagnostic Code List) which will have lots of information.
In the old days we just used to change the oil and filters and stick in new points and condenser, change the plugs and wash your car. Now we need a dictionary just to have a computer to talk to your car's computer to make things easier for us!???

Dashboard light am not sure what it means, it looks like an engine and is yellow orange kind of colour.

Amber is the color. When this light is on, it usually represents that a sensor or actuator that works with the emissions has failed. If the engine light should blink when driving, vehicle should not be driven due to severe damage to your catalyst system. You would need to take your car in and have a knowledgable technician to plug a scanner to your vehicle and retrieve the code that the computer has stored and have the technician explain to you why the light is on. There is usually a one hour charge for the diagnostic fee to retrieve the code but all shops may vary in price. Hope this helps.

Why does the dstc light stays on the dashboard?

The DSTC system by Volvo means Dynamic Stability & Traction Control, and is the equivalent of the ESP system (means the Electronic Stability Program). If the DSTC lights on the dashboard permanently the DSTC system is faulty. You must access the DSTC Electronic Control Unit (ECU) memory to pull out all DTC (Diagnostic Trouble Codes), using diagnostic equipment connected to the data link connector of the car. Then you will be full informed about bad pieces (e.g.: front right wheel abs sensor interrupted, ...). After bad pieces replacement you will be able to erase all faults memored by DSTC ECU, in other words reset the DSTC system and turn off the warning lamp on dashboard.

(!) is what icon looks like on my dashboard. I don't know what has caused it or if anything is wrong with the vehicle.

Accent Mualfunction Indicator Light...if you still have warranty left, speak to your dealer. If not, go to AutoZone and they will run a diagnostic scan and explain the fault codes retrived.
Good luck...i hope this helps.
