Question about 2003 Jeep Grand Cherokee
Over run on radiator fans is normally caused by a stuck relay, but if the
fan eventually goes off, then the relay is working, otherwise it would
keep running until the battery dies. there may be a timer in the relay
to allow the fan to "run on", so as to not only cool the rad, but also
to cool the engine bay, where the heat will well up. If a new stat was
put in, it could be that the stat is stuck, and one side of the system
is cold the other hot. check the inlet and outlet hoses on the rad, if
the temprature diffference is extreme, then the sat may be stuck closed,
or install backwards. Air is a poor onductor of heat compared to water,
so unless there is an airlock in the system which will be evident from
the differing heat areas of inlet outlet, the only other suggestion is
to check that the water pump is working. it may have failed, or be

I have a 2001 S60 and the thermo fans come on after nearly every trip for at least 5 minutes, I would check your coolant levels and certainly change the thermostat if the problem persists.
