Just a shot in the dark... But with the car at idle sray light bursts of carbeurator cleaner on vaccum lines if car revs you may have a vaccum leak, in that vicinity. May not be the problem, but vaccum leaks will cause a dramatic change in car's performance.

looks likes its underneath the car. check under the drivers side it should be fairly easy to spot with only 2 plastic lines connected to it as well as a bracket to hold it in place.

It sounds like the engine management computer is not getting any signal from the Air Flow Sensor. The signal from this sensor is ignored by the computer until the engine has started. Check the wiring plug for a poor connection where it is connected to the Air Flow Sensor, The sensor is located in an alloy assembly on the large tube that runs between the Air Filter and the inlet manifold. It could also be that the engine management computer is faulty and can only be fixed by replacement of the complete unit.

Rough idle, and will not go into 1st or 2nd gear

The first and second gear thing sounds like the pressure plate is worn or maybe the throw-out bearing is shot. The rough idle could be from a bad spark plug, bad plug wire or maybe something worse (clogged injector, fuel filter).

check your fuel pump or fuel pump relay. When you try to start the car you should hear the fuel pump hum from the rear of the car.

It is next to the battery on mine. 3" round and 5" long silver canister. A wire braided hose on each end with a screw thru it to attach it to each end.

yes. Depending on where your fuel filter is located, you can disconnect the fuel line at the fuel filter and then try to crank the car over. If it spits fuel out of the disconnected line your pump is working, if not then it's bad. Another way to tell, but not always is when you car is started you hear a high pitched whining sound from the tanks. This is usually (again, not always) an indication of a fuel pump about to fail.

How hard is it to change a thermostat in a 1989 vw cabriolet?

Not a difficult job at all, just a tad-bit messy. Will need to follow the hose from the radiator to find the mounting location of the thermostat on the engine block.
