Check your coolant level sensor, its possible that be wrong; I have a similar problem and clean the plug connector I solve it. If this dont fix the problem, its possible that you have bad this sensor.

It can take several heating and cooling cycles to get the coolant level
stabilized at approximately 2 or 3 inches down from the filler neck
(cold). There has to be room for expansion.
The level sensor cannot be repaired; the complete reservoir has to be
replaced.

When that light flashes it is trying to get your attention because the
computor thinks the level is very low. What I would suggest is to check
the coolant level to verify that it is at the full mark. Then unplug the Coolant Level sensor to see if the message turns off. If it does then the sensor is
faulty and could be replaced. However having this sensor really isn't
necessary unless you are the kind of person that doesn't check the
fluids or do regular oil changes. So replaceing it would be your call.
Driving with the low coolant message flashing isn't really a big deal.
Also, its possible that the Engine Coolant Temperature sensor is bad... removal & installation procedure
Turn
OFF
the ignition
Drain the coolant to below the level of the engine coolant
temperature (ECT) sensor.
Disconnect the ECT sensor harness connector.
To install:
Coat the sensor threads with sealer GM P/N 1050805, or equivalent.
Install the ECT sensor (1). Tighten the ECT sensor to 20 Nm (15
ft. lbs.).
Connect the ECT sensor harness connector.
Refill the coolant system.
Turn the ignition
OFF
.
Drain the coolant to below the level of the Engine Coolant
Temperature (ECT) sensor.
Disconnect the ECT sensor.
Remove the ECT sensor.
To install:
WARNING
Use care when handling the coolant sensor. Damage to the coolant
sensor will affect the operation of the fuel control system.
NOTE
Replacement components must be the correct part number for the
application. Components requiring the use of the thread locking
compound, lubricants, corrosion inhibitors, or sealants are identified
in the service procedure. Some replacement components may come with
these coatings already applied. Do not use these coatings on components
unless specified. These coatings can affect the final torque, which may
affect the operation of the component. Use the correct torque
specification when installing components in order to avoid damage.
Coat the sensor threads with sealer GM P/N 1050805, or an
equivalent.
Install the ECT sensor and tighten to 15 ft. lbs. (20 Nm).
Connect the connector to the ECT sensor.
Refill the coolant system.
