Well what is it that you are asking? What have you tried to narrow it down? A couple of things that would cause loading up at an idle are, a clogged air filter, maybe overdue for a complete tune, dirty injector nozzles, wrong fuel line pressure due to a tired fuel-pump, a faulty fuel regulator, timing could be off or the engine could have a defective part, like an IAC or map sensor. Good luck.

How do you adjust the idle when ac running?

It should put a slight load on the engine it is compressing and circulating gas and liquid. If the load is more than normal you may have clogged or over charged system. If your a.c. temp is good when running and your losing a little power then that's normal.
However idle should be automatically adjusted by the the vehicles PCM to accommodate for AC load if it's not then there is a bad sensor that's not telling it that the AC is running or it's sending the signal to adjust idle and the part that does it is bad.

Idles up and down and hesitates under a load

Without a steady idle rate, its bound to act up when there s load on it cos with the fluctuation the idle might be too low at some point. Things to look at will be the idle control solenoid, throttle body, MAF sensor, check if carbon tracked then clean out throttle body with carbeurator cleaner.

When the a/c is running, when you stop at an interesection the car stalls

That's usually caused be a low idle speed.
But the processor should increase the idle speed when the A/C is on.

Check the normal ,warmed up idle speed, then step on the brake pedal to see how much the idle drops with the stop light load. Then turn on the A/C to see how much the idle drops.

The processor should increase the idle speed to compensate for the increase in load on the engine.

Truck idles in park but drops to about 500rpms and lower if idling in drive and dies.

sounds like the idle air control vavle. when you put a load on the engine such as putting it in gear or using the ac or turning sharply, the iac is suppose to let more air in so the engine will idle up a little. if its stuck and you load the engine by pulling it in gear it will let the idle drop and possibly die.

4.3 Liter V-6 Idles rough when in gear, runs fine on highway.

Can you check fuel trims at idle and under load?
If fuel trim is high at low speed and load, look for a vacuum leak.
If fuel trim is high at high speed and loads, look for fuel volumn problem or restriction.
If fuel trim is high at all speeds and loads look for pcm input fault, maybe a maf sensor problem?
If fuel trim is negative low speed and load, look for fuel pressure regulator or injector leak. If fuel trim is negative at all speeds and loads check ect and iac.

If you have the spider fuel system, that system is noted for problems. key on engine off, 60--66 psi fuel pressure.
