I am wondering how difficult it may be to replace the water pump in a 1996 chevy camaro z28 ??

Aside from the space you have to work in it is not hard at all. Some bolts and hoses and an electrical connection. The accessory brackets stay because the pump is right between them. Unlike the early days before serpentine belt system where the brackets would attach to the pump as well.
But while you're in there, since the LT1 has the distributer behind the pump, you might consider repacing the cap, rotor and wires.

R&r 5.7 distripter in 1996 camaro

Replacing the Optispark Distributor is a real pain in this year and the LT1 engine.
Here are the steps
Remove accessory drive belt
Remove air intake hose to engine
Remove Radiator fans (unplug wiring harness first)
Drain the cooling system
Remove water pump (unplug water temp sensor first, tie hoses back out the way)
Remove Crankshaft balancer (you can get around the hub).
Remove Optispark cap and the rotor, the remove the bolts that hold the distributor to the block

Reverse to assemble.

I need to know the torque specs for the head gasket for a 96 3.8 chevy camaro

Tighten the cylinder head bolts to 50 N·m (37 lb ft) in sequence.

Use a torque angle meter to rotate each cylinder head bolt 120 degrees in sequence.

Use a torque angle meter to rotate the four center cylinder head bolts an additional 30 degrees in sequence...
