Maybe you are close to a solution. I was thinking you may have jumped the High pressure switch instead of the Low pressure. But what about power TO the connector you are jumping? If the connector is dead at that point you have to backtrack its power source.
If the Sable has the Digital controlhead for the A/C there are some self-diagnostic tests it can be made to run by pushing display buttons in a particular sequence with a small time limit. I do not have the sequence for it, you should be able to get it from the internet.

they shouldnt have jump starter for one being a newer car and so many electrics it can cause problems with the cpu. also if they did not fill the oil filter it may contribute
