If you have air conditioning, I'd check the A/C compressor to rule that out first. It has a very real potential to be going bad. The clutch on the compressor stops putting drag on the motor causing it to stall. Any high pitched squeal just before stalling? I know you're talking heat, and I'm talking A/C I realize that. Happens a lot on Windstars I've dealt with.
