There should just be a clamp holding the hose to the thermostat neck

The thermostat is located under the housing by the upper radiator hose. Follow the upper radiator hose to the engine. That should be the thermostat housing. There should be 2 or 3 bolts that hold that down. Take those out and the thermostat is under it.
Hope that helps

My 2001 dodge ram 1500 will not get hotter than 160 degrees. I changed the thermostat and the coolant level is fine. What else could it be?

Now thats interesting.
I assume you are using the gauge on the dash to judge the engine temp, but you also said before you have no heat. The gauge could be off, but you would know by the radiator hoses if the engine is warming up or not.
Assuming the new thermostat is not defective, the coolant would have to be bypassing it somehow.
I would want to make sure there is no air pockets in the cooling system, and see if both radiator hoses are cool.

How do i change the thermostat on a 2001 dodge ram 1500 v8 5.2?

The A/c condenser should be condensating under the hood where the condenser is. if you truck isnt getting warm the water wont get warm, sounds like you have a leaky heater core. also the thermostat is where the upper radiator hose goes into the intake manifold. simply drain a about half the wate rout of the red, remove the hose clamp and the hose, the remove the two botls that secure the thermostat houseing, installation is reverse, be sure to use a gasket and place a small film of RTV, emphasis on film, not a bead. on the gasket.

Where is my thermostat located on a 2000 dodge ram

Follow the top radiator hose to the engine. Where the hose meets the engine there is a cover with two or three bolts holding it to the engine, it is under there. Before you take it off, make sure the engine is cool and you have drained enough antifreeze out of it for safety and so you don't make a mess. Antifreeze is very toxic, so you want to avoid any spills
