Changed mass air flow sensor now keeps stalling

Indeed, I'd be for recovering the original MAF sensor and cleaning it. One VERY important part of cleaning is to NOT use Acetone or anything similar that would cut through the "varnish" coating from it's calibration days. Use Isoproyl (ordinary rubbing alcohol for cleaning). Clean with a Q-tip and if any fuzzy cotton fragments get hung up inside, simply blow them out OR remove with tweezers. Re-install and you'll probably be better off than with a replacement. To expound further on the varnish matter. . . they're (MAF sensor) calibrated during manufacture WITH the varnish in place. Removing that coating often renders them useless thereafter. Most common symptom of MAF sensor problem is sluggish acceleration to eventually VERY sluggish acceleration. Hope this helps some. . . and thank you for trusting Fixya'

Bogs down with little acceleration

run fault codes and look for accelerator position sensor and MAF/MAP problems. Have a pressure test done on the fuel manifold to check for pump, pressure regulator and filter problems.

?acceleration sluggish when cold?

any codes like air temp sensor, MAP or o2 sensors. A local auto parts place should be able to read the live data stream for you at no cost. Could just need an intake clean. I have seen a bad coil here and there(when wet). Great car.

92 corolla with VAF code 31 acts like MAF sensor is bad; car bogs when accelerated, stalls cold. But there is no MAF-I confirmed this with the dealer. What is malfunctioning?

Your corolla doesn't use a MAF sensor, it uses a MAP sensor

The map sensor is located on the Intake Manifold right by the throttle body. That could easily be causing the issue you're stating.
