Your Thermostat is malfunctioning and needs to be replaced. It is sticking (closed) causing the elevated temperature. When it reaches that higher than normal temperature, is when it opens up. It should opening up between 180 and 195 degrees Farenheit. Yours is obviously way beyond that.
Replace it and recheck operation.

2004 dodge stratus R/T with 2.7 heater blows cold air and it has coolant and new thermostat and the overflow boils over without the temp gauge being above halfway. how do you fix that?

Sorry to say but i have had plenty of experience with dodge vehicles and have ran into this problem before.....its your head gasket sucking air...(hence the bubbles in your overflow tank isnt from being hot....its the air escaping from your engine)......Plus the posiblility of your heater core being clogged....

When my 2001 dodge stratus is cold and warms up the temperature gauge goes all the up too extreme hot then eventually comes down to normal. Is this a bad thermostat?

It sounds like a possible "sticking" thermostat.
I'd maybe flush the system and replace the thermostat just to be safe.
The cost of a gallon of antifreeze, a new thermostat, and some blue silicone gasket maker is a whole lot cheaper than replacing parts of an engine that overheats and warps...

Acts like it's not getting enough gas when idoling, drives ok going down the road but not when idoling. Dodge Stratus 2000

I would first have the computer scanned for any codes. codes will help alot in finding the problem, you may have a bad vacuum leak or bad idle air control valve, so start with the codes, autozone parts store will scan your computer for free, get the codes and if you need more help give me the codes and i'l point you down the right path. hope this is helpful.

96 Stratus wont restart after it is warmed up, dealership has changed distributor, computer, crank pos sensor, coolant sensor, oxygen sensor

What about the spark control Module? Sometimes when these get hot they either run rough or die and won't restart until it cools down.

2000 Dodge Stratus misses, or hesitates, when going up a hill or when at a stop and you have to let off the gas and then push it again to get it to go. In the winter, i smelled a sickly sweet smell wh

Heater core is a possibility, and monitoring your coolant level closely should tell you if it is leaking as level will go down. As far as hesitation goes, if check engine light comes on, a trip to autozone or Pep boys for a free trouble code scan, should point everyone in right direction rather than replacing parts by guessing. (much cheaper that way too)
