If its a cable then it needs adjustment, then you can adjust the cable on the transmission; however if its hydralic, then the clutch slave cylinder needs replacing.

I need to get the clutch cable off a 1997 vw cabrio. How do i get the cable off the clutch pedal

After disconnecting the cable from the engine compartment remove the lower panel on the driver side. Press clutch peddle to floor then reach around the steering wheel column on the gas peddle side. you will feel a plastic guard. reach under guard you will feel the cable on top of clutch peddle. pull cable up and toward back of car.

Clutch cable on 2002 VW Cabrio

The mechanic you went to was wrong, these cable have a lot of tension, sounds to me like you may need a new clutch installed as well as a new cable( they are self adjusting and chances are you wont be able to deadjust your old cable.)
