The more you give it gas the more oil pressure your engine generates so yes the gauge should go to the right indicating more pressure.especially now with new and clean oil.normal nothing to worry about.hope this helps you.

Hummer H2, was on highway with cruise control on and it started making a loud noise. Smoke coming from engine. Pulled over and it continued to run but would not move....

I would suggest that there is no water in the cooling system or no oil in the sump and that the motor has either seized or failed from excessive heat.

How to reset oillife

As with most GM cars and trucks, you turn the key switch on but don't start the engine. Depress the gas pedal to the floor 3 times. The change oil light should flash. Turn the key off, then start the engine.
Check your owners manual for details.

Why is my oil pressure gauge on my 2003 hummer h2 always read 80 when the vehicle is running, back to zero when shut off?

because when the engine is shut off, the oil pump is also shut off, therefore no oil pressure. no problem here!
