You say this is when you start car so I would assume it's not overheating. I would check out these possibilites.
A: Low coolant level
B: Bad temperature sensor. (Good chance) If you have access to a trouble code scanner and it reads any code from P0115-P0119 it's the sensor.
C: Cooling system problem. This could be any number of things like a leaking head gasket, broken coolant bottle, as stated before a low coolant level, bad water pump, leaking hose, etc. But if you see no loss of coolant, there may be no leaks. These would cause overheating fairly quickly while being driven.
I'd start by checking the coolant level and making sure it's full. Make sure nothing's leaking. If this is good, I'd change that sensor, should be easy to replace and not too expensive if you are handy around cars. I don't know exactly where it is on that vehicle but I've read on the 2003 with the 2.0 liter engine (1896cc) it is clipped in to the rear of the hose connector bolted to the left hand end of the cylinder head. It'll just be a little sensor in the head to check the coolant temp. I've replaced them on other cars when the fans stopped working but the A/C would turn them. I know that isn't what your problem is but it's the same type of sensor. Just unhook wiring connector, unscrew or unclip sensor and replace. Reconnect wire and see if your problem stops.
