Off hand I would say you have Air in the Clutch system you need to bleed it out and then you Might/Should have to adjust the Slave to fully depress the clutch all the way .. Your not getting full movement on the slave..
its on the pedal to the pedal housing and for the life of me i cannot remember exactly where it went ,i work on anything up to 4/5 different makes and models of vehicles a day and at my prime time in life i have a job remembering what i had for breakfast or where i left my 13mm spanner ,Sure their is a little hole in the pedal and one on the housing ,it pulls the pedal down a sligh amount so the doesnt lift up or spring up when taking the foot off
The transmission doesn't have anything wrong, is simple the pressure plate, one of the 3 parts that conform a clutch. Just take the car to a honest mechanic and tell them that you can to replace the clutch. The advantage of a manual transmission is the fact that they are practically for ever, unless you leave them for months without the high viscosity (w-90) oil that they use.
Have you checked your sparkplug cables that run from the coils to the sparkplugs. Had a simular problem and it was the cables. Park in a garage, pop the bonnette and check if there is any loss of spark at the spark plugs.
these cars are fitted with a fly by wire accelerator pedal that is controlled electronically by the cars computer it is possible that there is a computer problem or the throttle body ( air intake system )or accelerator pedal is playing up. it is highly possible that the car is doing exactly what you say it is i recommend you take it back to VW and demand that they take a proper look at it you might have to leve it with them for a couple of days and get a service advisor to drive it home so as they can see the problem ocure. regardles the cars computer should of thrown a code declaring a fault in the system witch should give the tecs some were to start looking.
