200 give or take. Sensors can be a little plus or minus so as long as it within a 10 degree parameter you should be ok. The cooling fan turns on at around 220 or so.

Depending on the thermostat it has instaled in the engine it should run from 170 f to 190 f.

My 2001 dodge Dakota with 4.7 engine. The check engine light came on and the code reader says that the engine runs cold to long. What does that mean??

probably means that the thermostat is stuck open or missing, the temperature sensor unit (not temperature sender unit) is faulty and needs replacing

Truck blew upper radiator hose changed that and thermostat still over heating think its air bound any way to bleed 2001 dodge dakota

remove the radiator cap, leave it in park, start up and let it idle. turn on the heater so the air gets out of the heater core. give it 15 or 20 min. after it reaches operating temperature. if needed, do it again. also remember your thermostat may be bad

2001 Dodge Dakota 4WD Quad Cab: engine RPM's too high/jumpy

could be a lot of things. I personally would start with your vacuum lines... check for a leak somewhere. You can do that by spraying carb cleaner (if motor tries to die, you found your leak), or it could be a sensor, likely idle air control, mas air, etc.)
