I'm going to guess that you have the V6?
Replacing the gaskets is not too difficult for someone with basic mechanical/handyman skills. Go to the website for a tutitorial on the job:

While you have the intake off, make sure you replace the spark plugs.

What is the torque spec for valve cover and intake plenum for a 2003 escape

Its not the torque witch will in most cases will be under 10 FT LBS its the order that you tighten then that's important.
You have to tighten things like this in a controled order 3 to 4 times starting in the middle and working your way out but slowly so its evenly tightened down .
And if you didn't clean the gasket surfaces and use the proper sealers you might as well not bother doing it at all .
DON'T SNAP THEM OFF

Recommend check for a vacuum leak especially at the back of intake where all the vacuum hoses connect. If all the hose seem good then you will need to replace the intake plenum gaskets. Common problem on the Ford 3.8 liter engine.

Upper Intake Plenum Gasket R+R Torque Sequence

I cannot post a picture here because that is copyrighted material. However, the torque sequence is always "start in the center and work your way out to both ends...pretty simple.

The torque specifications are different depending on which engine your Escape is equipped with.

My 2003 Ford Escape had a bad crank shaft sensor which, would cause it to stall out, mainly when the engine was hot. It often would not start after I turned off after a long drive. Once the engine was cool it would re-start. The replacement sensor was a bit differennt then the original. The original appeared to be mostly plastic, while the new one was metal. Ford must have know they had a problem part.

Idles bad

Sounds like you may have an upper intake manifold leak. Typically the gasket between the Plenum and the lower intake dries up and gets sucked into the intake a little causing a leak and a high idle issue. The repair requires the removal of the plenum and replacement of the gasket. NOTE: there is a torx bolt hidden between the center plenum runners and can only be seen by looking straight down at the top of the plenum and it may be covered in dirt. If you have to use a bar to pry off the plenum you probably have missed a bolt. Typically it is the one noted above. Best of luck.
