Not necessarily, but thermostats do fail and it's entirely possible that your car needs a new one.

The thermostat is located by the front of the engine inside a metal casing with rubber hoses attaching to the casing. This can be seen to the lower side of the inlet manifold. (V6)

After driving my 2003 jaguar x type for a while, temperture guage goes to hot and diplay says engine is overheating. i stop, turn car off and recrank, temperture is fine until i drive for a while then...

Thermostat will need to be replaced. I recommend draining a quart of anitfreeze by loosening the petcock on bottom of radiator. Then re-tightening. Then follow upper radiator hose, it will lead right to thermostat housing. It should have about 3 screws/bolts on it to remove. The thermostat is underneath.

Ihave a 2.5 V6 Jaguar X type 2003 base model. Does it have abs and traction control ? As none of this appears on the instrument panel.

ABS is Standard on the X-Type range.
Jaguar Traction 4 is standard on all 4 wheel drive vehicles. DSC was an optional extra!
