Motor shuts down when reaching normal operation temp

Sounds like the mass air flow sensor or the air intake temperature sensor. Sometimes just wiping out the throttle body/air intake can make all the difference

Good Luck and Happy Motoring

2000 Dodge Durango dies speradically

If you run you car constantly on low gas you heat up your fuel pump, gas actually act as a coolant for that pump, what you have done actually sounds like is over worked that pump. It's just not able to keep up the fuel pressure that is needed to fun the car and when you turn it off you let the fuel pump cool and then it will work This is only a suggestion but change the fuel pump and keep a little more gas in it. Hope this helps
