If you didn't have this problem before the brake job,
Return to the shop and have them recheck the tightness of of all brake caliber bolts.
And check to see if all caliber side pads are in place.

How can I stop my ABS brakes from occasionally activating even when I come to a gentle stop. I coast to a stop, hit the brake, and the front end feels like it's gonna fall off. The sound it makes is...

You can unplug the ABS, and it will be disabled. Doesn't sound like that's the problem, though. Have your front end checked, brakes, suspension, wheels, CV axles, everything. Before it cripples you on the road.

How to change front brakes?

No Diagnosis is complete without a visual however the fix is probably going to be a complete Brake Job with Resurfacing and Fluid Flush !
You may want to consider this a safety issue and stop driving it till you get it fixed .

Front brakes

also most certain that the carrier that is pulled toward the disc by the opposing force of the piston on reverse disc face is sticking, this is causing only part of the pad to come into contact with the surface of the disc, non tech solution is to strip calliper and clean surfaces of carrier, caliper and piston including caliper pins, take them all back to metal and use high melting point grease a thin smear on reassembly, the dust makes exceptionally hard deposits on the metal that can easily distort the operation of calipers, ideally a dial gauage should be used to check run out of the disc, this measures side ways movement of the disc, in this case if there is excess then disc warpage may be yr answer. i suspect just dirt though it generally is
