Is the blower motor running? make sure your heater core is not clogged up.

If the temp gauge is now more stable, the problem is in your heater system, not the engine cooling system.

usually its under the passanger side dash, but when in doubt follow the coolant lines, they should be about an inch around

No heat, Full radiator, Overheating, Stalled out

It could cause all of them the stalling would be caused the engine got hot.

Check your radiator antifreeze level. If it's low, that could cause this problem.

The shift lever where you adjust where the heat needs to go may be the problem. It's mechanical, and if it functions except defrost, then it sounds more like a mechanical problem w/ the heat adjustment. Unless you aren't getting heat at all.
