My friend has a janitorial business and carries an auto-scrub machine inside his van.  He has had lots of water spills inside and it ends up frosting the inside of the van in the winter.   Snow or melted snow from off of your shoes will add up and make too much moisture inside the vehicle.   Look for other ways that moisture may enter your vehicle.

Moisture inside the vehicle. If you have a water leak that is allowing water to get into the car it will cause this problem. Also if the A/C water drain is plugged and there is water standing in the blower fan area you will have the same problem.
Pull your carpet back on the driver and passenger side at the fire wall and check for moisture, if the carpet backing is dry on both sides you will want to check the drain under the hood.
Good luck.

the window frosting up ( fogging up ) is from the hot humid air inside the cab hitting the cold glass. To quickly get rid of it run the ac unit as well and that dehumidifies the air and the fog goes. It is called climate control

Inside of car windshield ices over

Has the AC been disconnected? When the defroster is in operation the AC should run. It acts as a dehumidifier. (one possibility) sounds silly/ but true.
