I have changed the plug wires and the PCV breather tube and it runs GREAT. But now the "check engine" light won't go off. Any suggestions?

If the Check engine light is staying on, that means that there is a fault code stored on the car computer.

Go to the nearest mechanic and ask them to scan OBD codes.

The returned code will tell you the cause of the problem.

Fault code reading is free at Autozone, and it is usually done for a small fee at any local garage.

THe engine is burning oil and fouling the sensors and clogging the converter. This could be caused be a faulty PCV valve, bad valve seals or piston rings, This condition only gets worse = as the converter clogs it puts back pressure in to engine and forces motor oil back into the air intake thru either the PCV passage or vent breather tube. You can try to clean some of crud out of the converter and exhaust system with a good additive like Seamist or Techron, etc. The underlying cause will still cause it to clog again is you don't repair the root problem.

Oil blowing out of the dipstick tube.

On top of the valve cover there is a fresh air breather unit. Make sure the breather unit is not plugged.
Also the fixed orifice PCV should be clear. Find a tool that will go through the orifice and make sure it is clean.
Remove the vacuum hose and check it for cracks or internal damage. With the engine running, make sure you have vacuum through the hose.
Let me know when your finished cleaning the crankcase breather system.

Could be either the ignition coil or an injector problem whereby the latter could be caused by impending failure of the on-board computer.
Check with any chain parts store in your area by phone and ask if they offer a free code check for your car.
Even without a check engine light, you may have a code (or more) stored in the ECU.
