Get it looked at or you may set a code for the catalytic converter. When an engine stays cold you use more gas and wear out the cat way alot faster. I would hate for you to have to replace a severl hundred dollar cat all because of a inexpensive part like thermostat or bad sensor

Temp gauge stays cold

If the thermostat is bad (i.e. stuck open at all times), this would allow coolant to circulate in the engine even when it is below the desired operating temperature. This leads to OVERcooling of the engine. You can either replace the thermostat as a first step or remove it and test it -- closed when cold, open when heated above 190-200F.

Why does my fan stay on when I turn off the vehicle after driving it in cold weather? Can it run down my battery?

Your fan will continue until your engine has been brought down to the required temperature. This is normal. However, if you just completed a normal/shortish run and your temperature gauge is going hot or into the red, you could have a thermostat problem, it needs checking out especially as winter is here.
