What is the best oil to use for a 1.8 gti 2004

Any good quality brand synthetic . 5W20..5W30 or similar.

Shell Rotella 5W40 is about as good as it gets. Always use a OE VW oil 4 or 6 and keep the others for next time along with oil drain washers.

VW has recommendations in the handbook if you still have it.

If this is the turbo engine....Engine takes 3.7 quarts, so you need to change it often as you can afford...about every 5000 to 7000 miles.
