Going down the highway at 55-60 mph I just barely tap the gas and the vehicle jumps, I press the gas hard and it stops, leave off the gas check engine light blinks and jumping continues.

A blinking light usually means exhaust system probably catalic converter. You most likely have a small blockage in it which means exhaust can't get out correctly. Have vehicle scanned at autozone or similar.

Do I have a bad fuel pump

Not symptoms of a pump. Sounds more like a bad idle air control valve. run some fuel system cleaned in it and run a full tank of gas to see if it changes.

Jumps out of first gear

check your three mounts; if they're ok then it's most likely a trans. problem. by three mounts I mean the two engine mounts and the one under the tail of the trans.

Problem i have a 99 expidition an when the truck is sitting till it is as though it comes out of gear, you press the gas pedal nothing but then jumps in gear an themn back out. if you lightly press the gas...

You have a fluid pressure problem. I'm not as good on trannies but when was the last time the fluid and filter were changed. A plugged filter can cause this along with damage if not fixed soon.

My 1990 Buick Lesabre shakes at 40 mph what do I do?

Check front engine mounts. Open hood, hold brake pedal down, put car in drive, press gas pedal down a little and see if engine jumps up due to a broken mount.

Pops out of gear

When you press on, or let off the gas pedal, the gearshift jumps into the neutral position, leaving the transmission out of gear. This problem becomes more frequent over time. This may mean that the shift linkage needs to be adjusted, or that there is an internal problem in the transmission.

Problems with stalling and high idle

I had problems with the idle and with the car stalling and found that it was a failed oxygen sensor. I replaced it and the car runs great now.
