When I turn my air conditioner on in my 2005 GMC Envoy, it cuts my car off.
The envoy was notorious for this. Especially after a battery disconnect. I'm going to step out on a limb and assume your Envoy has the 4.2 liter inline 6 cylinder engine. You can fix this all by yourself if you are handy with a screwdriver and throttle body spray cleaner. Go down to your local auto parts store, and get yourself a can of throttle body/intake spray cleaner.
Pop the hood on your Envoy, and unscrew the big black accordion-looking tube attached at your engine with the screwdriver. This tube runs across the top of the engine from the air filter on the right side fender under the hood. Pull the accordion tube off of the throttle body. The throttle body is what you will clean out with your can of throttle body cleaner.
The throttle body has a large, round brass-colored plate inside of it. This is what lets the air into the engine, and is what is causing your engine to stall with the A/C on. It also has a black electrical connector on the top of it with about 6 wires going into it.
Back to the repair. Once you get the air intake accordion boot off the throttle body, and can see the brass-colored throttle valve, grab your can of throttle body cleaner and a *clean* rag you won't mind getting dirty. Spray some throttle body cleaner on the rag. If you have skin sensitivity to chemicals, you may want to wear gloves. With your rag in hand, push open the throttle valve. Be VERY, VERY, VERY careful NOT to drop anything inside the opening!
You will see black carbon-like substance around the inside diameter of the opening. Use your throttle body cleaner soaked rag to clean all of this black stuff off until you can see shiny metal beneath it again. Do this on the bottom and top and sides of the valve. This stuff is causing the valve to stick and sort of choke off air flow to the engine when the A/C is on. Cleaning all of it off will restore your engine's idle speed to normal.
You can spray the throttle cleaner inside the throttle body, but a rag helps to clean it off. Also note, that depending on how much you spray into the throttle body, the engine may have a rough start initially and idle pretty rough until it clears the spray out of the system. Put it all back together and tighten up the accordion boot on the throttle body and you're done!
