I think he rover standard phone installed on 2003-2004 models does not support blue tooth at all, therefore, the only bluetooth headset you can use will work through the stereo. The standard phone has bluetooth capability, as it uses bluetooth to communicate with the car control centre, but I do not think there is any option to set teh phone pairing with a bluetooth handset.
The bluetooth handset will communicate with the control center through the car stereo, not with the phone.
You can find a choice of compatible devices below.

To use a phone with bluetooth headsets, you need to upgrade the navigation system and replace the existing mobile with a compatible mobile phone (I used Nokia N75 on my RR).

Unfortunately unless you have a old "Bag Phone" or one that can be hard wired into the car - then you're out of luck.

The system doesn't have a bluetooth availability unless you have the system modified by a professional audio installer or replace the old system completely.

How do i connect my mobile with my x type jaguars phone system

If there is no mobile phone Paired to the
vehicle system and the SIG screen is
displayed, Pairing may be performed as
follows:
Select Phone Mode (if not already
selected).
Use touch-screen keypad to enter the
following digit sequence and press the
Send/End button.
The following sequence performs exactly
the same function, but times-out after
approximately five minutes, ##1#*#.
(If you are not familiar with the Pairing
process, this sequence is NOT
Recommended, because of the time-out
period.)
At the SIG**** screen the vehicle system
is waiting for communication with a
Bluetooth equipped telephone.
Check that your mobile phone is set to the
Jaguar Bluetooth system, using the menu
functions on the phone. Refer to the
handbook that was supplied with your
specific mobile phone.
When Jaguar device is found on the
mobile phone display, the phone will
prompt you to enter the pass key (1313)
on the mobile phone keypad.
When the above operation has been
completed and the phone is successfully
Paired and connected with the vehicle
system, the SIG* screen will be displayed.

I nned to know how to set up bluetooth in my car. it has all the functions on the steering wheel but I dont know how to set it all up . I also cannot find my manual !

You need to have the Bluetooth code (a four digit number that should be with your vehicle documents)
- Turn Bluetooth at your phone.
- With the car ignition key at Position 0 (Off), pressand hold the phone key on your steering wheel.
- Whilst still holding the phone key down, turn the ignition key to position 1.
- release the phone key after about 3 seconds.
- The car display should then show "BLUETOOTH PAIRING" or similar.
- Search for new bluetooth devices with your phone.
- When the BMW unit is detected, select and enter the 4 digit PIN.
- Your phone should now work via the cars Bluetooth interface

Turn on your NAV screen and go into the info main menu in the Nav system. If no NAV refer to the drivers handbook, since you will sinc by using the voice command buttons on the steering wheel and the car will offer you prompts.
Click on telephone, settings, Bluetooth, ADD PHONE.
Then go into the menu for the Curve, tools , add devices, enable handsfree, search new device are the icons you need. You will need to authorize the Curve to accept a new device by entering a 4 digit pin code, which will show on the car`s screen. Once completed, the car will acknowledge the Curve in it`s screen
