Oil light is rather important it goes out if oil pressure is good comes on if oil pressure is low when it comes on damage is expected with continued operation like wearing of main bearings and pistons and cylinders can lead to a engine rebuild
Could be the person who changed it never ran the motor and then topped it off once the filter was full. Have you checked the oil level after you let the car sit overnight to make sure the oil level is on full? I would say it could be a bad oil level sensor, except that the coincidence of coinciding with an oil change is too obvious.
The light means the oil pressure has dropped below 10psi. You could replace the oil pressure switch and see if the light stays off, or have the pressure checked with a mechanical gauge. Make sure the engine oil level is full.
You have to reset the check engine oil level light. The light is just a 3 month reminder that lets you know when to change your oil. You have to hold the reset button on your dash for more then 5 to 10 sec. The procedure is in the owners manual that came with the car.
