My diferencial is making a sound

Once the differencial is making a sounds it mean that a major damage has been done to it. You can change the differencial fluid and visually inspect the gears to look for big broken metal pieces. If so you will have to replace it. Sonner then later the tires are gonna get locked and you're not gonna be able to move the trow without towing it.
Please don't forget to rate me. This will help me thanks

Pinion needs shimmed, or the bearing is bad. It will have to disassembled to do either.

Leaking rear axle seal

Yes...You need to also remove the cross shaft for the spider gears (retained by either a bolt or drift pin) and then push the axle inward to remove the "c" clip on the end.
It isn't difficult but you may want to get yourself a haynes or chiltons manual to help a bit.You need to take care that after the cross shaft is out that you don't let the spider gears walk out of the housing.

Can you change differencial fluid or does the shop have to

NO you can do it .It is easy to do. Remove cover slowly and let oil drain out. Leave 2 bolts loosely on and pry off cover with screw driver. Oil will flow out very fast. Clean cover and diff. where they meet, put on high temp. gasket sealer on theses surfaces and put back. Then fill with correct gear oil till it flows out of hole.

Howl rear right wheel

As a matter of fact the diff can make noise on and off the gas, my own car a 1996 Corvette does this, it needs the ring and pinion replaced, is this what you are talking about when you say they told you that you needed a whole new differential?
